Soak the rice for half an hour, chop the onion, tomatoes, and parsley finely, and crush the garlic.

Sauté the onion in olive oil until it wilts but remains white, then add the crushed garlic and stir for just a few seconds. Next, add the chopped tomatoes and tomato paste, stir for a few seconds, then add the rice and parsley and let it sit for a minute before removing from heat.

Add the mint, salt, citric acid, pepper, coffee, and olive oil, and mix well, adjusting the sour salt to taste.
